A look inside: Choi’s, Sale’s new fusion maki restaurant
If you thought you knew sushi, think again. A bold and brilliant new concept has landed in Sale – and it’s turning tradition on its head in the most delicious way.
Choi’s, recently opened on Washway Road, is Sale’s first fusion maki restaurant, serving up playful, inventive twists on the classic Japanese roll. Whether you're a seasoned sushi lover or a curious newcomer, this is a place that’s guaranteed to surprise and delight.
Where East meets West
Run by wife-and-husband duo Kathy and Luca, Choi’s opened in May 2025 and has already made a positive impression locally. The menu, which took the pair over a year to develop, is a creative love letter to their global culinary journey, blending fine-dining experience with a relaxed, local vibe.

The couple met while working at London’s iconic Savoy Grill back in 2014 and have since honed their craft in top kitchens across Europe, Asia and Australia. Now, they’ve brought that world-class expertise to Sale – and you can taste it in every bite.
On our visit, we sampled two standout dishes that capture the spirit of Choi’s fusion philosophy.
First up: the Temaki Carbonara (above). This hand roll is a revelation – creamy parmesan mousse, crunchy guanciale, a truffle-cured egg yolk and shaved parmesan, all rolled with finesse. It’s rich, indulgent and entirely original – Italian comfort food reimagined as a sushi roll. At just £5.25, it’s also incredible value.
Next: the Tama-Kimchetta (below - £12.50), featuring melt-in-the-mouth porchetta, Choi’s own house-fermented kimchi, tamago pancake, mayo and rocket. A little spicy, a little sweet, with just the right amount of zing. It’s a flavour bomb that keeps you coming back for more.
And that’s just the beginning. The menu is full of clever touches – from Bologna Nut Crumble maki, to La Paella Negra, a cuttlefish ink rice roll topped with octopus and a mushroom ragu. For plant-based diners, there are creative veggie options like the Tofu Bibimbap hand roll or The Mediterranean. There are a number of gluten-free dishes available too.

Choi’s is fully licensed, offering a carefully chosen selection of sparkling wines, whites, reds and rosés, alongside beers, traditional sake, fragrant yuzu liqueur and rich, plummy umeshu. Thanks to their strong supplier connections, the wine list is regularly refreshed, so there’s always something new to discover in your glass!
The interior of Choi’s is intimate and inviting, ideal for a casual bite or a relaxed date night. Booking is advised and takeaway and delivery are also available.
It’s clear that this isn’t just your every day restaurant – it’s a passion project. Every detail, from the presentation of the food to the warm, knowledgeable service, has been carefully considered.
