Tucked away on Florence Street in Sale lies a culinary treasure that's been quietly building a reputation with locals thanks to its vibrant flavours and authentic Caribbean cuisine. Caribbean Creations is owned and run by dedicated and passionate head chef Valerie Leveridge, alongside her husband, Alvin. A Sale hidden gem due to its location, those who discover Caribbean Creations will be treated to an unforgettable food experience.

From dream to delicious reality

For Valerie Leveridge, the journey to opening Caribbean Creations was fuelled by a lifelong dream and a twist of fate. Moving to Sale in 1995, Valerie always harboured the ambition of running a café that paid homage to her Caribbean heritage. However, it wasn't until the pandemic and her redundancy from the travel industry that she saw the opportunity to turn her dream into reality. "My family thought it was another one of my pipe dreams," Valerie told us. 

"But I was determined to make it happen."

Valerie began experimenting with recipes at home, meticulously crafting a menu that not only offered a nod to her Caribbean roots but also catered to diverse dietary preferences, including vegan options. "I wake up with recipes in my head," she says. "I go to the kitchen, bring those ideas to life, and they taste exactly how I imagined."

A deli transformed 

The turning point came when Valerie discovered the unit on Florence Street in Sale, previously known as Delicia Deli. With a vision in mind, she introduced some new dishes alongside the previous deli offering, including brisket and her signature jerk chicken. In August 2023, Valerie made the bold decision to dedicate the menu entirely to Caribbean cuisine, highlighting the rich and diverse flavours that distinguish it from other culinary traditions. 

"Caribbean food isn't just 'hot' as many people think; it's a whole world of flavours," Valerie explains, drawing on her upbringing in Manchester with Jamaican parents to fuse multicultural influences into her cooking.

Fresh and flavourful every day

At Caribbean Creations, every dish is made fresh daily, from the homemade pastry for filled patties (pictured above) to the succulent jerk chicken wings, roti wraps with curry chicken or goat, vegan wraps and the Caribbean classic rice and peas. Valerie's commitment to freshness and quality is evident in every bite, offering a genuine taste of the Caribbean that's hard to find elsewhere.
